HEALTHY GRILLED CHICKEN & VEGGIES

Main Ingredients:

Chicken breasts: 4 halves skinless boneless
Olive oil: 2+1 tbsp
Garlic: 2 cloves, finely minced
Dried thyme: 1 tsp
Fresh lemon juice: 1 tbsp
Freshly ground black pepper: 1/2-1 tsp
Salt: 1/2-1 tsp
Bell peppers: 2, sliced
Zucchini: 2, sliced

Directions:

1. Wash chicken breasts and pat dry.

2. Mix 2 tbsp olive oil, minced garlics, thyme, salt and pepper.

3. Rub the mixture over chicken breasts.

4. Drizzle 1-2 tbsp olive oil over sliced zucchini and bell peppers. Season with salt and pepper.

5. Grill chicken breasts and vegetables over medium-high heat. Do not over cook them (about 5 min on each side).

6.Sprinkle with fresh lemon juice and serve.
